An agricultural leader that must be read with the right year
Agreste's structural survey counted 349,600 farms in metropolitan France in 2023, around 40,000 fewer than in the 2020 census. In the same year, French agricultural output reached €86.7 billion according to the ministry's key summary published for 2025. These figures do not measure the same thing: farm count, area, physical output, value and farm income answer different questions. When comparing a sector or region, retain the year, metropolitan or overseas scope, unit and source rather than mixing a current price with an older structural total.
Production follows soil, water and markets
The Paris Basin and Centre-Val de Loire concentrate cereals, oilseeds and sugar beet; Brittany, Normandy and Pays de la Loire combine dairy, cattle, pigs and poultry; Nouvelle-Aquitaine brings together wine, maize, livestock, fruit and forestry. Occitanie mixes arable crops, vineyards, sheep and Mediterranean production; Auvergne-Rhône-Alpes links mountain livestock, dairy, fruit and wine; Provence-Alpes-Côte d’Azur produces fruit, vegetables, olives, wine and aromatic plants. Grand Est combines major crops and vineyards. Overseas territories have distinct crops, constraints, calendars and support regimes that should not be inferred from metropolitan averages.

Farm, land and business are not synonyms
A farm may operate land that is owned, rented or otherwise made available, and may use an individual, corporate or collective structure. Utilised agricultural area alone reveals neither turnover, margin nor workload. Before a purchase or takeover, separate land, buildings, herd, permanent crops, machinery, stock, rights, contracts, water and permits. Check leases, easements, plant and animal health, soil tests, buyers and working-capital needs. The advertised price of an estate is never the complete operating cost, and buying rural property does not by itself create an economically viable agricultural business.
PDO, PGI, Label Rouge and organic make different promises
PDO connects all essential stages to an area and know-how; PGI links at least one production stage or quality to geographic origin; Label Rouge denotes a higher quality level defined by a specification; organic certification governs production and processing practices. No mark alone guarantees a preferred taste, low price or total environmental outcome. Read the INAO entry, defined area, specification, control body and product label. For organic conversion, also verify the certifier, land history and transition period before treating the harvest as certified or pricing it as organic.
Organic farming in 2025: sales recover while area falls
Figures presented by Agence BIO on 16 June 2026 count 2,692,419 organic or converting hectares in 2025, equal to 10.0% of French agricultural area, with 17.3% of farms engaged. Area fell 1% year on year while consumption rose 2% by volume and 3.6% by value. Sectors moved differently: arable and vineyard area declined while fruit and vegetables increased. A national average therefore cannot replace the local price, buyer demand, certification cost, conversion plan and route to market for a particular territory and product.
Selling requires a market, a margin and traceability
Co-operatives, merchants, processors, wholesale markets, hospitality, export, producer shops and direct sales allocate price, volume, logistics and risk differently. Before production, model a cautious yield, contracted or volatile price, grading, storage, packaging, transport, waste, payment delay and working capital. Direct selling adds customer access, payments, hygiene, labelling and commercial time. For exports, check the tariff code, origin, sanitary requirements and certificates for the exact product and destination. A market indicator is not a sales contract, and a trade-show contact is not an import authorisation.
Climate, water and insurance are parcel-level decisions
Drought, heat, frost, hail, flood, fire, disease and pests do not affect every crop or herd in the same way. Check VigiEau and the prefectural order for current water-use restrictions, Géorisques for the address, Agreste and FranceAgriMer for sector context, then use the holding's soil, available water and yield history. Compare diversification, variety, sowing date, shade, permitted irrigation, storage and insurance by cost and effectiveness. A nationally announced emergency scheme may still depend on a defined area, documented loss, eligible applicant and local application window.
Start, take over and follow the 2026 CAP file
The route begins with an economic and personal project, then the installation and transfer contact point, Chamber of Agriculture, Safer, MSA, single business portal and local authorities as relevant. Viability, land, professional capacity, finance and permits must be tested before signature; young-farmer support is neither automatic nor identical across regions. For the 2026 CAP, area applications opened on 1 April and the no-penalty deadline was 18 May, so the campaign is closed. Existing applicants should act on Telepac alerts; the notice sets 20 September 2026 as the general modification limit except specified cases. Prepare 2027 from future notices, not an old date.
Frequently asked questions
How many farms are there in France?
Agreste counted 349,600 in metropolitan France in 2023. The year and geographic scope must accompany the total.
Is PDO the same as organic certification?
No. PDO protects a geographic link and know-how, while organic certification regulates production and processing practices.
Can a 2026 CAP area application still be filed?
The 2026 campaign has closed. Existing applicants should follow Telepac; the stated general modification limit is 20 September except specified cases.
Does buying a farm automatically make someone a farmer?
No. The activity, status, land, finance, social registration, permits, markets and viability all require verification before signature.
Where can an agricultural water restriction be checked?
Use VigiEau and the applicable prefectural order for the relevant commune, abstraction and water use.
